Veganism, anyone?
I am seriously considering veganism. A bunch of beans is certainly cheaper than a chicken breast and a striploin steak. My husband supports me in a lot of things, but he shot me down on the vegan thing. I believe his words were "You're nuts." Nuts are vegan. Maybe it was a hidden message?!
Anyway, I do eat a lot of vegan stuff anyway, chickpeas, lentils and rice are staples of my lunchtime diet. But dinner will be a bit harder. I likely won't be a hard-core vegan, but I did convince Tyson to try Meatless Mondays and Fish Fridays. Today is Meatless Monday. I made an awesome quinoa salad on the weekend, but left it at mom and dad's. What will tonight's tortuous tasty dish be?
After a perusal of the internet, I have decided to forego the quinoa salad and go with my good old fave: deep-fried tofu. I had it one time at a friend's house. They were vegan, and served a wonderful array of nontraditional: Kohlrabi, spicy hummus, rich guacamole, and yummy deep-fried tofu. Before allowing us to dig in, he presented us with a bowl of rich red sauce. With the variety of food on the table, I excitedly asked what the red sauce was. Was I ever disappointed when he looked at me and replied simply:"ketchup."
Tyson and I eat the tofu with siracha mayo. I really think the tofu is just a vehicle to consume the mayo!
Tonight's dinner will not be vegan, as I use an egg to get the breadcrumbs to stick to the tofu before frying. And, there will be siracha mayo consumed in copious amounts. Accompanied by a kale cesasar salad, I'd say we've got dinner!
